Picnic Bison Burgers
¼ cup finely chopped onion
2 tbs fine dry bread crumbs
2 tbs finely chopped green bell pepper
2 tbs Ketchup
1 tbs horseradish
1 tbs prepared mustard
¼ tsp salt
¼ tsp pepper
1 lb ground bison
In a bowl combine onion, bread crumbs, green pepper,
ketchup, horseradish, mustard, salt and pepper. Add ground
bison and mix well. Shape into 4 patties. Grill to your
desired doneness. Can also serve with mozzarella cheese added
at the last minute of grilling.

Osso Bucco
Ingredients
Shank cuts of bison
Sauce or gravy---
Recipe is for 1 gallon--adjust as required
1 yellow onion
1 carrot
2 stalks celery
3 cloves garlic
1 bay leaf
3 sprigs each of thyme and
rosemary
Enough brown gravy packets
for one gallon--add water
according to packet
directions.
Salt and pepper to taste
Procedure
Dip the shanks first in oil and then in flour.
Brown the bones very slowly in a greased heavy pan containing
half oil and half butter.
Place the shanks upright as close together as
possible. Cook until golden in the fat. Set aside.
Caramelize the carrot, onion, and celery. Add
garlic, bay leaf, thyme, and rosemary.
Bring to a boil the brown gravy packets until you
have a medium nappe consistency. Add salt and pepper to
taste.
Preheat oven to 250 degrees.
Place shanks in the heavy pan. Cover and bake until
all meat on the bone is tender.
The gravy or sauce can be served over the Osso Bucco
or used as a braising liquid.

Country Style Steak
4 pieces of cube steak (1 lb bison)
1 can of mushrooms soup (98% fat free)
1 jar of Heinz beef gravy (98% fat free)
1 jar of mushrooms
Salt and Pepper to taste
1 tbsp of Worcestershire sauce
¼ pack of Dried Onion Lipton soup mix
Heat stove on medium high
Have frying pan hot and place steak in pan 2 minutes and turn over 2 minutes on the other side
Open beef gravy and mushroom soup, mushrooms,
Worcestershire sauce and Dried Onion Lipton soup mix.
Place in a large bowl and add ½ cup of water
Mix well and pour over steak and simmer on low heat for 1 hour
It will melt in your mouth!!!
